Sam arrived in Airlie Beach after Tropical Cyclone Debbie, when he received the nod from his brother that the town needed help with the clean up. Around the same time Hemingway’s was undergoing it’s refurbishment for the grand reopening and Sam’s name popped up as the ideal candidate to bring our cocktail menu to life.
Sam has over three years’ experience working the bar scene in London and has trained as a molecular mixologist, which is in simple terms someone who makes incredible cocktails! If you haven’t tried one of Sam’s specialty cocktails, then we highly recommend you do – particularly the smokey rum which is quite the spectacle!
Sam’s partial for Mexican food, naming Fajitas among the family favourites. If he was stranded on a desert island, he would take lots of rum, a jet ski and a machete with him to survive! In interesting fact about Sam is he swam the English Channel, which is a stark contrast to swimming in the warm waters of the Whitsundays.
Sam’s number one Whitsundays tip is: visit Cedar Creek Falls, they are beautiful and peaceful especially after a good rain.
Which dish does Sam recommend on the Hemingway’s menu: The Chocolate Entremet dessert
