If there is one thing you need to experience when on holiday or visiting the Whitsundays it is watching the sun set over the hills with a cocktail in hand. Our absolute waterfront location provides the perfect vantage point to relax as the day turns to night, whilst sampling our delicious range of cocktails prepared by our experienced mixologist Sam Abbott.
Having a wealth of experience in well-known bars and restaurants in London, Sam brings an element of theatre to the cocktail making process at Hemingway’s and has designed a few signature cocktails, which are not to be missed. If there is something missing from the cocktail list, which is a particular favourite, then rest assured Sam is your man and is more than happy to assist.
From the Gold Anchor Martini which pays tribute to the award-winning marina precinct we call home, and makes the perfect pre-dinner aperitif, to the popular Whitsunday mixing sparkling wine with berries and cranberry juice, we have a cocktail to suit all tastes.
Pair your favourite cocktail with a meat and cheese platter from our appetizer menu, grab a group of friends and sit back and relax until the sun sets on another perfect Whitsunday day. Between 3 – 5pm daily as the hustle and bustle of the marina is in full swing and the day boats return with their satisfied customers, the deck at Hemingway’s gives a relaxing waterfront ambience which is hard to beat.
For those who choose to dine with us for lunch or dinner, start your meal with the cocktail of your choice. For the coffee lovers amongst you, the classic Espresso Martini is a popular choice or if you are looking for an absolute classic, try the Hemingway’s daquiri. The great author Hemingway himself was rather partial to a daquiri and during his time in Cuba and southern Europe was often photographed sitting on the waterfront of a busy port watching the hustle and bustle whilst sipping a daquiri and enjoying a Cuban cigar.
To accompany our specialty desert, The Night Cap we recommend the Smokey Rum cocktail. The subtle smoked flavor brings out the finer elements of the Angustura 7year rum with which it is prepared and is fast becoming a firm favourite with our regular diners. Watching Sam work his magic on creating this masterpiece is a spectacle in itself, and all part of the Hemingway’s dining experience.
For those of you who don’t drink, we can of course mix up and suitably delicious mocktail, so you don’t miss out on the experience. For locals and visitors alike, why not make Hemingway’s the place to be in Airlie Beach for cocktails at sunset?
