Experienced Sous Chef and kitchen character, Zibby tells us his story:
Zibby’s mother wanted him to be a priest, however lucky for Hemingway’s it wasn’t quite his calling and he chose a career in the kitchen instead. His first venture into a commercial kitchen was in 2009 and Zibby has been hooked ever since. Arriving in Australia from Poland with his beautiful wife, the young couple decided to travel the whole of the East coast to find the right place to live. Three days into the trip they arrived in the Whitsundays and the rest is history, they have been here ever since and are both incredibly happy to call our tropical paradise their home.
Zibby’s favourite dish on the menu is the lamb, as it incorporates one of his Grandmothers recipes, which remains very close to his heart. He also loves to cook Asian and Mediterranean dishes, but loves to experiment with flavors and textures to create the perfect dish. Having worked together previously with Matt Dixon (Head Chef), the culinary pair are passionate about creating delicious well-presented food using fresh local Whitsunday produce.
If Zibby was stranded on a desert island he would take with him a sharp knife, a fishing rod and his extensive cookbook collection in the vane hope he would then finally have chance to read them all! As a chef, Zibby doesn’t have a great deal of spare time, but when he does he likes spending time with the family and taking his girls to the Airlie Beach lagoon. If he can manage 5 minutes to himself, then you will find Zibby sneak off somewhere for a quiet fishing trip – then no doubt whipping up a gourmet dinner with the catch of the day for his family!
